Crowd Pleasing Mashed Potatoes

Holiday meals are an opportunity to bring family members together.  However if your family is anything like mine, it is a mine field of dietary restrictions.  Grandma is lactose intolerant.  Cousin Joey is diabetic.  And little Suzy will only eat white foods.  It can be a challenge to create a meal that offers something for everyone.

I decided to try a vegetarian mashed potato dish that is as tasty as is it easy.

6 to 8 medium Yukon Gold Potatoes.

1 tsp of sea salt.

½ tsp of ground black pepper.

5 to 6 cloves of minced garlic.

3 to 4 vegan butter or margarine. 

1/4 cup of fresh chives chopped.

If you want creamy potatoes peel them, otherwise halve your potatoes and place in a large sauce pan covered by 1 inch of water.

Bring to a light boil over high heat and add 1 tsp of sea salt. Cook for 25 to 30 minutes until fork tender.

Chop up chives while potatoes cook.

Drain potatoes and mash until fluffy. 

Add in the butter and garlic and season with salt and pepper to taste. 

Garlic can be sautéed in advance if you are feeling especially fancy.

Finally top with chives and serve.

Leftovers (if you have any) with keep in the fridge for a few days.
