Bara Brith (Welsh Christmas Bread)

Baked goods are a common party of many holiday traditions.  From fruit cake to Gingerbread, there is just something about a warm baked good during the winter.  Today I would like to share a Welsh treat.

8 oz (225 ml) milk

Clear honey for glaze

2 oz (50 g) 1 tsp brown sugar

4 level teaspoons active yeast

1 lb (450 g) plain flour

1 level teaspoon salt

1 level teaspoon of mized spice

3 oz (75 g) butter or margarine

1 beaten egg

12 oz (350 g) mixed dried fruit

Warm in a pan the milk until it is hot to the hand.  Then transfer to a bowl.  Whisk is a teaspoon of the sugar followed by the yeast and let sit in a warm place for 15 minutes.  Sift the flour and salt into a large mixing bowl.  Stir in the remaining sugar. Rub in the butter or margarine into the dry ingredients until mixture looks like breadcrumbs.  Add in the mixed spice followed by the beaten egg and finally the yeast.  Mix into a dough. 

Turn the dough onto a floured surface and knead until smooth and elastic (about 10 minutes).  The place the dough into a bowl, cover, and let sit for an hour and a half or until the dough has doubled. 

Turn dough out onto a floured surface and know down the dough.  Gradually knead in the dried fruit and pat out to a rectangular shape.  Roll it up from the short side and place in a loaf tin seam side down.  Cover and let rise until the dough has rounded nicely above the edge (roughly 30 to 45 minutes).

Pre-heat the oven to 375 F (190C).  When dough has risen transfer the oalf to the oven and bake for 30 minutes.  Cover the loaf with tin foil and bake for additional 30 minutes. 

Let loaf cool on a wire rack and brush the top with the honey before it cools.  S

Serve thinly sliced and buttered.
